Das Deutsche Brotmuseum ist kein Brot-museum. Dies ist nur ein scheinbarer Widerspruch. Denn: Wer erwartet, er könne hier in größerer Zahl historische, konservierte Brote sehen, der wird ent-täuscht. Der Gründer des Museums lehnte es von allem Anfang an ab, "Brotleichen" zu sammeln und auszustellen, da Brot selbst kein Museumsobjekt, sondern ein täglich frisch zu genießendes Lebensmittel sei. Dieser Überlegung ist das Deutsche Brot-museum bis heute gefolgt und hat eine Sammlung von ungeheurer Vielfalt angelegt, die von der Mausefalle bis zur Picasso-Radierung reicht. Heute umfaßt der Bestand mehr als 14 000 Objekte, darunter rd. 3900 graphische Blätter und Dokumente, 172 Gemälde, eine bedeutende Sammlung an Münzen und Briefmarken sowie eine Biblio-thek mit rd. 4500 Fachbüchern, Katalogen u.a. Ferner besteht ein umfangreiches Archiv. Damit gehört das Deutsche Brot-museum zu den großen Spezialmuseen.

Zu seinen Sammelgebieten gehören:

 Gerätschaften der Bäcker und Müller, Backöfen
 Objekte zur Geschichte der Berufsstände der Bäcker und Müller
 Bildliche Darstellungen aller Art, die den langen Weg vom Pflügen des Ackers über das Säen, Ernten, Dreschen, Mahlen und Backen bis hin zum Brotverkauf und -verzehr aufzeigen
 Kunstwerke zum Thema Brot und Not
 Alles, was die Zusammenhänge zwischen Brot einerseits, Religion, Brauchtum und Politik andererseits deutlich macht, da-runter vor allem auch
 Plakate
 Erinnerungen an frühere Hungersnöte und Informationen zur gegenwärtigen Welternährungslage
