    Chickens?  So lean and with feet?  Here even "organic" and "natural" have loads of fat.  And feet?  Who saw feet?  :-D

      these are rare breed chickens that are hard to get. They are only sold by a few breeders in the country and have the Slow Food label. They are old breeds and sort of disappeared and have been re-introduced the last few years as there is great demand for healthy food and respect for the animals. These boys have been in huge fields and slept in the walnut trees that grow there locally. They were sort of playing and running...looked very happy. Only available 3 months a year...The names are the breed....Chaam is a tiny village not far from my home and that is where the one on the left, the Chaamse Pel, comes from. The other one is also local breed .They are rather lean because they run and have to look for their food and only get small amounts for free! :) The taste is very different...almost like pheasant or veal;...somewhat like that!
